A guided path through bread baking
The "Your first loaf" learning path links four guides in the Baking & dough section in a recommended reading order. The goal is to give a beginner baker exactly the knowledge they need — in the right sequence — without requiring them to work out which guide to read first.
The four guides, in order
1. Baker's percentages, explained with one loaf
Start here. The baker's percentages guide introduces the ratio system used in all professional bread formulas. By the end, you will be able to read any bread recipe, scale it to any size, and understand what "70% hydration" means. There is also a baker's percentage calculator in the toolkit that runs entirely offline.
2. Hydration and flour
The hydration and flour guide explains how water content changes the texture of the crumb, and how to handle wet dough without adding too much flour. It covers the difference between a sandwich loaf formula (60–65% hydration) and a higher-hydration open crumb (75–80%).
3. Proofing: how to tell it's ready
The proofing guide explains the poke test, what dough temperature does to fermentation speed, and what over-proofed dough looks and feels like. This is the most common point of failure for beginner bakers — most first loaves are either under or over-proofed.
4. Oven heat and steam
The final step covers how heat and steam combine in the oven to produce a good crust and a full rise. It explains oven spring, why steam matters in the first 15 minutes, and how to simulate a bakery steam inject with what you already have at home. According to King Arthur Baking, steam is one of the most overlooked variables in home bread baking.
The bake-along event
The first live session based on this learning path runs on 16 October 2026 — mix, fold, shape and bake together online. The event follows the same four stages as the path and is designed for those who learn better with a live instructor.
